Recipe of the Month There are many desserts that characterize summertime, especially desserts that are light and use fresh fruit. This refreshing dish is a sweet variation of pizza, is full of flavor, and makes a great presentation.

Summer Dessert Pizza

Ingredients

  • ¼ cup butter or margarine, softened
  • ½ cup sugar
  • 1 egg
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon lemon extract
  • 1¼ cups all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 ounces cream cheese, softened
  • ¼ cup confectioners’ (powdered) sugar
  • 1 cup whipped topping
  • 1 firm banana, sliced
  • 1 cup sliced, fresh strawberries
  • 1 (8 ounce) can mandarin oranges, drained
  • 2 kiwifruit, peeled and thinly sliced
  • ½ cup fresh blueberries
  • GLAZE: ¼ cup sugar, ¼ cup orange juice, ¼ cup water, and 2 teaspoons cornstarch
Preparation
  1. In a mixing bowl, cream butter and sugar; beat in egg and extracts. Combine flour, baking powder, baking soda, and salt; add to creamed mixture. Beat well. Cover and chill for 30 minutes. Press dough into a greased 12-inch by 14-inch pizza pan. Bake at 350 degrees for 12 to 14 minutes or until light golden brown. Cool completely.

  2. In a mixing bowl, beat cream cheese and confectioners’ sugar until smooth. Add whipped topping; mix well. Spread over crust. Arrange fruit on top. Combine glaze ingredients in a saucepan; bring to a boil, stirring occasionally. Boil for 2 minutes or until thickened. Cool to room temperature, about 30 minutes. Brush over fruit. Store in refrigerator until ready to serve.
