
There are many desserts that characterize summertime, especially desserts that
are light and use fresh fruit. This refreshing dish is a sweet variation of
pizza, is full of flavor, and makes a great presentation.
Summer Dessert Pizza
Ingredients

¼ cup butter or margarine, softened

½ cup sugar

1 egg

¼ teaspoon vanilla extract

¼ teaspoon lemon extract

1¼ cups all-purpose flour
-
¼ teaspoon baking powder
-
¼ teaspoon baking soda
-
¼ teaspoon salt
-
4 ounces cream cheese, softened

¼ cup confectioners’ (powdered) sugar

1 cup whipped topping
-
1 firm banana, sliced
-
1 cup sliced, fresh strawberries

1 (8 ounce) can mandarin oranges, drained

2 kiwifruit, peeled and thinly sliced

½ cup fresh blueberries

GLAZE: ¼ cup sugar, ¼ cup orange juice, ¼ cup water, and 2 teaspoons cornstarch
Preparation

In a mixing bowl, cream butter and sugar; beat in egg and extracts. Combine
flour, baking powder, baking soda, and salt; add to creamed mixture. Beat well.
Cover and chill for 30 minutes. Press dough into a greased 12-inch by 14-inch
pizza pan. Bake at 350 degrees for 12 to 14 minutes or until light golden
brown. Cool completely.

In a mixing bowl, beat cream cheese and confectioners’ sugar until smooth. Add
whipped topping; mix well. Spread over crust. Arrange fruit on top. Combine
glaze ingredients in a saucepan; bring to a boil, stirring occasionally. Boil
for 2 minutes or until thickened. Cool to room temperature, about 30 minutes.
Brush over fruit. Store in refrigerator until ready to serve.
